A Zesty Lemon Muffin With a Tasty Lemon Glaze Drizzled On Top.
These Muffins Are Amazing For Breakfast Or For Dessert & They Are
Extremely Soft & Moist & Delicious..

COOKING TIME: 20 minutes
Ingredients
- 2 Cups flour
- 1/2 Tsp salt
- 1 Tsp Baking Powder
- 1/4 Tsp Baking Soda
- 1/2 Cup buttermilk
- 1/2 Cup Sour Cream
- 2 Tbsp Fresh Lemon Juice
- 1 Cup Sugar
- 1/2 Cup Butter (Soften)
- 1 Tbsp Lemon Zest (Grated)
- 2 Eggs
- 1 Tbsp Butter (Melted)
- 2-3 Tbsp Milk
- 1 Cup Powdered Sugar
- 1-2 Tsp Lemon Juice (freshly Squeezed)
Instructions
- Preheat oven to 350 degrees.
- Combine flour, baking powder, baking soda, salt in a medium bowl and whisk together. Set aside.
- In a medium bowl, whisk together sour cream, buttermilk and lemon juice. Set aside.
- In a large bowl beat sugar, 1 stick of butter and lemon zest. Add eggs and beat until fluffy. Add dry ingredients (from step 2). Add sour cream mixture, and mix until well combined.
- Add cupcake liners to muffin pan and spoon all mixture into each liner. Bake for 20 minutes. Let cool.
- For glaze, mix together melted Tbsp of butter, milk, lemon and powdered sugar. Add more powdered sugar if it is too runny or more milk if it's too thick, Drizzle over muffins. ENJOY!
